Curing: Between 4 and 6 months.
Detailed description
Made with select lean meats (ball, mantle, head and ham trimmings) and Iberian pork fat chopped into very fine pieces, stuffed into the pig's natural cular casing and seasoned with spices (pepper and nutmeg).
