Origin: Guijuelo (Salamanca).
Curing: Between 5 and 7 months.
Detailed description
Made from the whole loin piece seasoned with spices (garlic, paprika and oregano), stuffed into pork cular casing, threaded casing and/or fiber and cured in natural drying rooms. The whole piece measures about 75 cm long. When cut, it has a marbled and juicy appearance.
