Castro y González Selección is a ham with an elongated shape and a dark hoof worn smooth by long walks in the pastureland. Its fat is slightly darker than that of Castro y González de Bellota, and the proportion of fat is lower, giving it a milder and more pleasant aroma. With a minimum curing time of 36 months and a carefully selected diet of natural grains, grass, and acorns, a Castro y González Selección is always a guarantee of flavor and quality.
